Prepare the batter for these yeast-raised waffles the night before and get ready to have some of the best tasting, lightest waffles you'll ever eat the following morning.

Night-Before Yeast Waffles

1 (1/4-ounce) package active dry yeast or 2 1/2 teaspoons
1/2 cup milk
2 large eggs
3 cups all-purpose flour
1 tablespoon granulated sugar
1/2 cup vegetable oil
1 teaspoon salt
1 1/2 cups milk
Maple syrup for accompaniment
Butter for accompaniment
  1. Dissolve yeast in warm milk. Add eggs, flour, sugar, oil, salt, and milk; mix well. Refrigerate, covered, overnight.
  2. Bake in a hot waffle iron according to the manufacturer's instructions. Serve with maple syrup and butter.

Makes 6 servings.

Note: For a thin and crisp waffle, add more milk.
