Your whole family will love this pizza-flavored quiche. For a nice flavor variation, try cooked crumbled Italian sausage in place of the pepperoni.

Quiche Italiano

1 (9-inch) deep-dish frozen pie crust, thawed
1 1/2 cups (6-ounces) shredded mozzarella cheese - divided use
1/2 cup spaghetti sauce
1/3 cup (1-ounce) pepperoni slices
1/4 cup chopped green bell pepper
1/4 cup chopped onion
2 large eggs
3/4 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
  1. Preheat oven to 350°F (175°C). Bake pie crust for 6 to 8 minutes, until set; allow to cool.
  2. Layer pie crust with 3/4 cup of cheese, then spaghetti sauce, pepperoni, green pepper, onion and remaining 3/4 cup of cheese.
  3. In a medium-sized bowl, combine eggs, cream, salt and pepper; mix thoroughly and pour over filling.
  4. Place on cookie sheet and bake for 45 to 50 minutes, or until golden and knife inserted in center comes out clean. Cool for 15 minutes; cut into wedges.

Makes 6 to 8 servings.

Note: Make a few at a time, wrap well and freeze. Then just thaw as many as needed overnight in the fridge; heat at 300°F (150°C) until hot in the center.
