A complete breakfast wrapped up in a flour tortilla. Make extra burritos, wrapped individually, for a quick, grab and go breakfast the next day. Simply reheat for 45 seconds or until hot in the microwave.

Sausage and Egg Breakfast Burritos

1/2 pound sausage
2 tablespoons chopped onion
6 large eggs
1 (4-ounce) can diced green chiles
1 cup shredded cheddar cheese
8 large flour tortillas
3/4 cup salsa
  1. In a large skillet over medium heat brown sausage with onion until no longer pink. Drain and set aside, leaving mixture in skillet.
  2. In a medium bowl beat together eggs and chiles. Add to sausage mixture; cook over medium heat, stirring occasionally, until eggs are set. Add cheese, mixing well to melt.
  3. Warm flour tortillas according to package directions.
  4. Spoon 1/2 cup egg mixture onto center of each warmed tortilla. Garnish with additional cheese and salsa, if desired. Fold half of tortilla over filling; fold sides toward center, leaving top open.
  5. Serve immediately.

Makes 8 servings.
