A luscious 'cake-mix-easy' moist coconut cake with cream cheese frosting sprinkled with sweetened flaked coconut.

Coconut Cake

1 (18.25-ounce) package white cake mix
1/4 teaspoon baking powder
1/4 cup vegetable oil
3 large eggs
1 cup sour cream
1 (8 1/2-ounce) can cream of coconut
2 cups powdered sugar
1 (8-ounce) package cream cheese
2 tablespoons cream
1 teaspoon vanilla extract
1 cup sweetened flaked coconut
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine white cake mix, baking powder, cooking oil, eggs, sour cream, and cream of coconut. Beat with an electric mixer at medium speed for 2 minutes.
  3. Pour batter into a 13 x 9-inch greased baking dish and bake for 30 minutes.
  4. Meanwhile, in a medium bowl, with an electric mixer at low speed, beat powdered sugar, cream cheese, cream, and vanilla until smooth and creamy. Spread over the cooled cake and sprinkle with flaked coconut.

Makes 12 servings.
