This rich cake is reminiscent of pound cake thanks to the vanilla pudding mix. It's rich and sweet and completely irresistible!

Easy Rum Cake

1 cup finely chopped nuts
1 (18.25-ounce) package yellow cake mix
1 (18.25-ounce) package instant vanilla pudding mix
4 large eggs
1/2 cup cold water
1/2 cup vegetable oil
1 cup rum, divided use
1 cup granulated sugar
1/2 cup butter
1/4 cup water
  1. Preheat oven to 325°F (160°C). Grease a tube pan.
  2. Sprinkle nuts in the bottom of a the tube pan.
  3. Combine cake mix, pudding mix, eggs, cold water, oil, and half of the rum in a large bowl. Mix for 2 minutes. Pour over nuts. Bake for 60 minutes. Allow to cool.
  4. Meanwhile, combine sugar, butter and second addition of water in a saucepan. Boil for five minutes, stirring constantly; remove from the heat. Stir in remaining half of rum then return to heat just until mixture boils. Prick the cake all over the top and pour on the glaze.

Makes 12 servings.
