Get the cake from a box and dress it up by adding mandarin oranges. Top it off with a vanilla custard, pineapple and whipped topping. End result is an easy cake to enjoy with family and friends.

Mandarin Cake

1 (7-ounce) can Mandarin orange sections, drained
1 (18.25-ounce) package yellow cake mix
1 cup vegetable oil
4 large eggs
1 (8-ounce) can crushed pineapple chunks, undrained
1 (3.5-ounce) package instant vanilla pudding mix
1 (8-ounce) container frozen nondairy whipped topping, thawed
  1. Preheat oven to 350°F.
  2. In a bowl combine mandarin orange sections, yellow cake mix, oil, and eggs until thoroughly combined. Pour batter into a 9-inch baking dish. Bake in oven for 35 minutes. Remove from oven.
  3. Combine pineapple chunks (undrained), instant vanilla pudding mix, and non-dairy whipped topping in a small bowl and beat until it reaches a spreading consistency. Frost the cake when cooled.

Makes 12 servings.
