A delicious twist on the average chocolate cola cakes, this one uses a yellow cake mix with vanilla pudding mix, coconut and pecans, and is iced with a luscious cream cheese frosting.

No-Chocolate Cola Cake

1 (18.25-ounce) package yellow cake mix
1 (3.5-ounce) package instant vanilla pudding mix
1/2 cup vegetable oil
1 cup shredded coconut
1 cup chopped pecans
1 (12-ounce) can cola-flavored soda
4 large eggs
1/2 cup butter
1 (8-ounce) package cream cheese, softened
2 cups powdered sugar, sifted
  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt cake pan.
  2. In a large mixer bowl, combine yellow cake mix, instant vanilla pudding mix, oil, coconut, pecans, soda and eggs; mix well.
  3. Pour batter into prepared pan and bake for 50 to 60 minutes, or until a wooden pick comes out clean when inserted in the center of cake. Remove from oven and cool in pan for 10 minutes. Remove from pan and cool completely on a wire rack.
  4. Frosting: In a medium bowl, cream together butter with softened cream cheese. Gradually beat in powdered sugar until smooth and fluffy. Frost the cooled cake.

Makes 12 servings.
