This terrific recipe for Pineapple Cake was submitted by Aunt Runner.
2 large eggs
2 cups granulated sugar
1/2 teaspoon salt
2 teaspoon baking soda
1 teaspoon vanilla extract
2 cups all-purpose flour
1 (20 ounce) can pineapple with juice
1 cup pecans
1 (8-ounce) package cream cheese
1/4 cup butter
1/2 teaspoon vanilla
2 cups powdered sugar
- Combine eggs and sugar; add remaining ingredients and mix well.
- Bake in 13x9x2-inch cake pan and bake for 30 minutes at 350°F (175°C).
- For Frosting: Combine all ingredients and spread on cooled cake.
Makes 12 servings.
