A rich, lemon and almond fragrant pound cake with a fine crumb thanks to a secret ingredient—lemon-lime soda pop!
3/4 pound butter
3 cups granulated sugar
5 large eggs
2 teaspoons lemon extract
1 teaspoon almond extract
3 cups all-purpose flour
1/4 teaspoon salt
3/4 cup lemon/lime carbonated beverage
- Preheat oven to 325°F (160°C).
- Cream together butter and sugar. Add eggs one at a time then stir in lemon extract and almond extract. Add flour and salt alternately with lemon/lime soda; beginning with flour and ending with flour.
- Pour into a greased and floured tube pan and bake for 1 1/4 hours.
