This yummy ricotta cheesecake in a cake
is 'cake-mix-easy'.
Ricotta Cake
- 1 (18.25-ounce) package yellow cake mix.
- 2 (16-ounce) containers ricotta cheese
- 4 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- Preheat oven to 325°F (160°C).
Grease and flour a 13 x 9 x 2-inch baking pan.
- Prepare cake mix according to package
directions. Pour into prepared baking pan. Set aside.
- Combine ricotta cheese, eggs, sugar and
vanilla until well blended. Spoon evenly over the cake batter.
- Bake for about 1 hour 15 minutes or until
wooden pick inserted in center comes out clean. Cool thoroughly
on wire rack. Sprinkle with powdered sugar. Store in refrigerator.
Makes 12 to 16 servings.
