Sandy's version of the
classic cocktail, Harvey Wallbanger, a spirited orange-flavored
and glazed cake.
Sandy's
Harvey Wallbanger Cake
- 1 (18.25-ounce) package
yellow cake mix
1 (3.5-ounce) package instant vanilla pudding mix
1 cup vegetable oil
4 large eggs
1/4 cup vodka
1/4 cup orange liqueur
3/4 cup orange juice

- Glaze:
1 cup powdered sugar
1 tablespoon orange juice
1 tablespoon orange liqueur
1 tablespoon vodka
- Preheat oven to 350°F
(175°C).
- In a bowl combine cake
mix, pudding mix, oil, eggs, 1/4 cup vodka, 1/4 cup orange liqueur,
and 3/4 cup orange juice. Beat with an electric mixer at medium
speed for 4 minutes. Pour into a greased and floured bundt pan.
- Bake for 50 minutes. Cool
30 minutes; remove from the pan.
- For Glaze: In a bowl combine
sifted powdered sugar, orange juice, orange liqueur and vodka.
Mix well; drizzle over the warm cake.
Makes 16 servings.
