Coconut Date Nut Balls

1/2 cup graham cracker crumbs
1 1/2 cups pitted dried dates
1 1/4 cups sweetened flaked coconut, toasted and cooled
1/4 cup honey
1/2 cup walnuts, chopped fine
  1. In a food processor blend the graham cracker crumbs, dates, 1/2 cup of coconut, and honey until mixture is just combined. Add walnuts and blend mixture until it forms a ball.
  2. Place remaining coconut in a shallow dish. Form date mixture into walnut-size balls and roll in coconut, pressing coconut slightly to make it adhere. Store in air-tight container in cool place.

Makes about 32 confections.
