Coconut Joys

No recipe image available.Moist little nests of coconut joy filled with bittersweet chocolate.

Recipe Ingredients:

1/2 cup butter
2 cups powdered sugar
3 cups (8-ounces) sweetened flaked coconut
2 ounces bittersweet chocolate, melted

Cooking Directions:

  1. Melt butter in a saucepan; remove from heat.
  2. Add powdered sugar and coconut and mix well.
  3. Shape rounded teaspoonfuls of mixture into balls. Make an indention in center of each ball and place on a waxed paper-lined baking sheet.
  4. Fill centers with melted chocolate. Chill until firm. Store in refrigerator.

Makes about 2 dozen confections.
