Little mounds of coconut joy filled with
bittersweet chocolate!
Coconut Joys
- 1/2 cup butter
2 cups powdered sugar
3 cups (8-ounces) sweetened flaked coconut
2 ounces bittersweet chocolate, melted
- Melt butter in a saucepan; remove from
heat.
- Add powdered sugar and coconut and mix
well.
- Shape rounded teaspoonfuls of mixture
into balls. Make an indention in center of each ball and place
on a waxed paper-lined baking sheet.
- Fill centers with melted chocolate. Chill
until firm. Store in refrigerator.
Makes about 2 dozen candies.
