A yummy, meringue-like confection...like
a candy kiss from heaven!
Never Fail Divinity
- 2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup hot water
1/4 teaspoon kosher or sea salt
2 large egg whites
1 teaspoon vanilla extract
- 1/2 cup chopped toasted walnuts or pecans
(optional)
- Combine sugar, syrup, water and salt in
a 3-quart saucepan. Cover pan and bring to a boil. Remove cover
and cook, stirring occasionally, to hard ball stage (260°F
| 125°C), or until a small amount of mixture is dropped
into cold water and forms a ball that holds its shape but is
pliable.
- Meanwhile, beat egg whites in large mixing
bowl until stiff. Gradually pour in hot syrup in small stream
while continuing to beat. Add vanilla and continue beating until
mixture will hold its shape when dropped from spoon.
- Drop by spoonfuls onto waxed paper or
pour into a 13 x 9 x 2-inch baking pan lined with lightly buttered
waxed paper or aluminum foil. Cool; invert pan and peel off paper.
Cut into squares.
Makes about 48 pieces of candy.
