Chutney-Mustard Glazed Chicken
To serve chicken with a sauce, double the mustard, chutney, and brown sugar.
1/4 cup country Dijon mustard
3 tablespoons chutney
2 tablespoons light brown sugar
1 (2 1/2 to 3-pound) whole chicken
- Combine first 3 ingredients.
- Place chicken, breast side up, on a rack in a lightly greased roasting pan. Fold wings under, and tie legs together, if desired. Brush with mustard sauce.
- Bake in a preheated oven at 350°F (175°C) for 1 hour to 1 hour and 15 minutes or until a meat thermometer inserted into chicken thigh registers 180°F (85°C), brushing occasionally with mustard mixture.
