Limey Cue Drumsticks
Chicken drumsticks kick it up in a garlicky lime marinade prior to being grilled or broiled. Serve with Coconut Rice, a green salad and wedges of fresh pineapple.
1 package PERDUE® Fresh Chicken Drumsticks
1 tablespoon olive oil
1 tablespoon prepared BBQ seasoning rub
1 tablespoon lime juice
1 teaspoon lime zest
1 teaspoon minced garlic
Salt and ground black pepper to taste
1 tablespoon cilantro, chopped
Smokey BBQ sauce (optional)
- In a gallon-size zippered plastic bag, combine olive oil, BBQ seasoning rub, lime juice and zest, and garlic and mix well; season with salt and pepper, if desired. Add drumsticks and toss to coat. Close and refrigerate chicken in marinade for 15 to 30 minutes (or longer in refrigerator).
- Preheat broiler or grill to medium-high heat. Cook drumsticks 14 to 16 minutes, turning occasionally, until chicken is cooked through and golden brown (thermometer inserted in the thickest part of drumstick registers 180°F | 82.2°C).
- Remove from grill or broiler and sprinkle chicken with cilantro and serve with BBQ sauce on the side, if desired.
