Tangy Lemon-Lime Chicken
This terrific recipe for Tangy Lemon-Lime Chicken was submitted by Maya Kline of Boise, Idaho.
2 lemons, juiced
2 limes, juiced
1 garlic clove, crushed
1/4 teaspoon dried thyme leaves
1/8 teaspoon ground black pepper
1/8 teaspoon oregano
1/3 cup sweet white wine
8 chicken thighs, boneless, skinless
1 tablespoon butter or margarine
Lemon and lime twists for garnish (optional)
- In large bowl, mix together lemon juice, lime juice, garlic, thyme, pepper, oregano and wine. Add chicken, turning to coat, and refrigerate for 30 minutes.
- Remove chicken from marinade. In large baking pan, arrange chicken in single layer and pour marinade over chicken. Dot with butter.
- Bake in 425°F (220°C). oven for about 40 minutes, basting every 10 minutes with pan juices.
- To serve, arrange chicken on platter, spoon pan juices over chicken and garnish with lemon and lime twists, if desired.
