Fill the cookie jar with these flavor-packed cookies and watch them disappear...one right after another!

Banana Oatmeal Delights

Cookies:
1/2 cup firmly packed light brown sugar
1/4 cup melted butter
1 large egg
1 ripe banana, mashed
1/2 cup all-purpose flour
1/2 cup old-fashioned oats
1/2 cup broken banana chips
1 teaspoon cinnamon
 
Browned Sugar Caramel:
1/2 cup granulated sugar
1/2 cup water
1 tablespoon evaporated skim milk
  1. Preheat oven to 350°F (175°C).
  2. Coat 2 sheet pans with baking spray. In large bowl, cream together brown sugar and butter. Beat in egg and mashed banana. Gradually stir in flour, oatmeal, banana chips and cinnamon. Drop cookie dough by teaspoonfuls onto prepared sheet pans, spacing 2 inches apart.
  3. Bake in preheated oven 14 to 16 minutes, until golden brown on the bottom. Cool on baking pan for a minute before removing from pans, transferring to wire racks. Cool cookies completely.
  4. To make caramel, stir sugar and water in medium saucepan over high heat. Bring mixture to a boil; boil for 1 minute. Remove from heat; stir in evaporated milk. Stir until smooth. Drizzle caramel over cookies; cool completely.

Makes 22 cookies.
