Honey-sweetened carrot oatmeal spice cookies.

Carrot Oatmeal Cookies

1/2 cup vegetable shortening
1 cup grated carrot
1 cup honey
2 large eggs, beaten
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups quick cooking oats
1/2 cup raisins
1 cup nuts, chopped
  1. Preheat oven to 350°F (175°C). Grease a baking sheet; set aside.
  2. In a large bowl cream together shortening and carrots. Stir in honey and eggs. Gradually stir in flour, baking powder, baking soda, salt, cinnamon, nutmeg, raisins, oats and nuts.
  3. Drop by teaspoonfuls 2 inches apart onto baking sheet. Bake for about 12 minutes or until lightly browned.

Makes 36 cookies.
