Chewy Chocolate Peanut Butter Cookies
- 2 cups granulated sugar
1 1/4 cups butter, softened
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 (10-ounce) package peanut butter chips
- Preheat oven to 350°F.
- In a mixing bowl cream sugar and butter with an electric mixer on medium speed until fluffy. Add eggs and vanilla; beating well.
- In another bowl combine flour, baking cocoa, baking soda and salt. Blend into the creamed mixture. Stir in peanut butter chips.
- Drop by teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake for 8 to 9 minutes. Cookies will be soft. Cool on the baking sheet until set, about 1 minute. Transfer cookies to a wire rack to cool completely.
Makes 24 cookies.
