An all-time favorite peanut cookie.
Chunky Peanut
Cookies
- 1 3/4 cups all-purpose
flour
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1/2 cup butter or margarine, softened
2 large eggs
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
2 cups salted peanuts
- Heat oven to 350°F.
- Combine all ingredients
except peanuts in large mixer bowl. Beat at low speed, scraping
bowl often, until well mixed. Stir in peanuts by hand.
- Drop dough by rounded
teaspoonfuls 2 inches apart onto greased cookie sheets. Bake
for 8 to 12 minutes or until lightly browned.
Makes 4 dozen cookies.
