Cowboy Cookies
- 2 cups brown sugar
- 2 cups granulated sugar
- 2 teaspoons vanilla extract
- 1/2 cup milk
- 4 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups butter or margarine
- 4 large eggs
- 3 cups old-fashioned (rolled) oats
- 1 1/2 cups sweetened flaked coconut
- 2 cups semisweet chocolate chips
- 1 cup chopped nuts (optional)
- Preheat oven to 350*F (175*C).
- Beat together the sugars, butter or margarine and eggs; add the vanilla and milk; mix well. Stir in the flour, baking powder and salt; mix well. Stir in the oatmeal, coconut, chocolate chips and nuts; mix well.
- Drop by spoonful onto ungreased cookie sheets. Bake for 8 to 10 minutes. Transfer to wire racks to cool.
Makes 6 to 7 dozen.
