Thick and chewy cowboy cookies are jam-packed with oats, coconut, chocolate chips and nuts.

Cowboy Cookies

2 cups brown sugar
2 cups granulated sugar
2 teaspoons vanilla extract
1/2 cup milk
4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 cups butter or margarine
4 large eggs
3 cups old-fashioned (rolled) oats
1 1/2 cups sweetened flaked coconut
2 cups semisweet chocolate chips
1 cup chopped nuts (optional)
  1. Preheat oven to 350°F (175°C).
  2. Beat together the sugars, butter or margarine and eggs; add the vanilla and milk; mix well. Stir in the flour, baking powder and salt; mix well. Stir in the oatmeal, coconut, chocolate chips and nuts; mix well.
  3. Drop by spoonful onto ungreased cookie sheets. Bake for 8 to 10 minutes. Transfer to wire racks to cool.

Makes 6 to 7 dozen.
