Wholesome oatmeal soy cookies
studded with chocolate chips and crunchy toasted soybeans.

Best Soy Cookies
- 2 cups soy margarine
2 1/4 cups packed brown sugar
2 1/4 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
3 1/2 cups all-purpose flour
3/4 cup soy flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
1 1/2 cups quick-cooking oats
2 cups sweetened flake coconut
2 cups semisweet chocolate chips
2 cups whole toasted soybeans
- Preheat oven to 325°F
(160°C).
- Cream margarine, brown
sugar, sugar, eggs and vanilla on medium speed of mixer until
blended.
- Combine flour, soy flour,
salt, baking soda and baking powder; mix well. Add flour mixture
to sugar mixture. Mix until ingredients are combined; do not
overtax.
- Add remaining ingredients,
one at a time; mix well after each addition. Lightly spray baking
sheets with vegetable cooking spray. Drop dough onto sheets 2
inches apart. Bake about 15 minutes or until lightly browned.
Makes 30 cookies.
