Chocolate chip cookies made with soy flour, soy milk and loaded with crisp roasted soy nuts.

Henry Ford Chocolate Chip Soynut Cookies

3 cups firmly packed light brown sugar
2 cups vegetable shortening or margarine
4 large eggs
1 cup soy flour
2 teaspoons baking soda
1 teaspoon salt
3 cups all-purpose flour
2 tablespoons vanilla soy milk
2 teaspoons vanilla extract
2 cups roasted soynuts, coarsely chopped
4 cups semisweet chocolate chips
  1. Preheat oven to 375°F (190°C).
  2. Beat brown sugar and shortening in a large bowl. Add eggs one at a time, beating well after each addition.
  3. Mix in soy flour, baking soda and salt. Add all-purpose flour gradually along with soy milk and vanilla. Stir in soynuts and chocolate chips.
  4. Drop dough by rounded teaspoons onto ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool 1 minute on baking sheet then remove to wire rack to cool completely.

Makes 96 cookies.
