Peanut Butter Temptations
Love chocolate peanut butter cups? Then you'll definitely be tempted to munch on these scrumptious cookies!
1/2 cup butter, softened
1/2 cup peanut butter
1/3 cup brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
36 miniature chocolate covered peanut butter cups, unwrapped
- Beat butter, peanut butter and sugars until light and fluffy. Blend in egg and vanilla. Add combined flour, baking soda and salt; mix well. Chill 2 hours.
- Shape dough into 1-inch balls, place in foil cup lined miniature muffin pans. Press one peanut butter cup into center of each ball of dough until only top shows.
- Bake in a preheated oven at 375°F (190°C) for 10 to 12 minutes or until lightly browned.
- Cool 10 minutes before removing from pan.
Makes 3 dozen cookies.
