actually make a good cookie...when you know you love to eat 'em
one right after another? Go ahead...give these cookies a try!
You won't be disappointed.
Potato Chip Cookies
1 cup vegetable shortening
1 cup granulated sugar
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup crushed potato chips
- Preheat oven to 350°F (175°C).
- Cream shortening, sugar and brown sugar
together until light and fluffy. Add eggs and vanilla, mixing
well. Stir in flour, then fold in potato
chips.
- Drop by tablespoonfuls about 2-inches
apart onto a lightly greased or nonstick baking sheet. Make a
criss-cross pattern with the tines of a fork on top of each cookie.
- Bake for about 12 minutes or until light
golden brown. Transfer cookies to wire rack and cool completely.
Store in airtight container.
Makes about 5 dozen.
