Is it so incredible that potato chips can actually make a good cookie...when you know you love to eat 'em one right after another? Go ahead...give these cookies a try! You won't be disappointed.

Potato Chip Cookies

1 cup vegetable shortening
1 cup granulated sugar
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup crushed potato chips

  1. Preheat oven to 350°F (175°C).
  2. Cream shortening, sugar and brown sugar together until light and fluffy. Add eggs and vanilla, mixing well. Stir in flour, then fold in potato chips.
  3. Drop by tablespoonfuls about 2-inches apart onto a lightly greased or nonstick baking sheet. Make a criss-cross pattern with the tines of a fork on top of each cookie.
  4. Bake for about 12 minutes or until light golden brown. Transfer cookies to wire rack and cool completely. Store in airtight container.

Makes about 5 dozen.
