Ranger cookies are loaded with extras like
oats, crispy rice cereal and coconut.
Ranger Cookies
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup vegetable shortening
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 cups old-fashioned rolled oats
- 2 large eggs
- 2 cups crispy rice cereal
- 1 cup sweetened flaked coconut
- 1 teaspoon vanilla extract
- Preheat oven to 375°F (190°C).
- In medium bowl combine flour, baking soda,
salt and baking powder, mixing well; set aside.
- Cream shortening and sugars until fluffy;
add eggs and vanilla, beating well. Stir in flour mixture until just mixed. Add oatmeal, rice cereal
and coconut.
- Drop by tablespoonfuls onto lightly greased
baking sheets and bake for 12 minutes or until edges
are lightly browned. Transfer to wire racks to cool. Store in
airtight container.
Makes 3 dozen.
