Ranger cookies are loaded with lots of chewy, crunchy deliciousness—like oats, crispy rice cereal and coconut.
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup vegetable shortening
1 cup granulated sugar
1 cup packed brown sugar
2 cups old-fashioned rolled oats
2 large eggs
2 cups crispy rice cereal
1 cup sweetened flaked coconut
1 teaspoon vanilla extract
- Preheat oven to 375°F (190°C).
- In medium bowl combine flour, baking soda, salt and baking powder, mixing well; set aside.
- Cream shortening and sugars until fluffy; add eggs and vanilla, beating well. Stir in flour mixture until just mixed. Add oatmeal, rice cereal and coconut.
- Drop by tablespoonfuls onto lightly greased baking sheets and bake for 12 minutes or until edges are lightly browned. Transfer to wire racks to cool. Store in airtight container.
Makes 3 dozen cookies.
