Old-fashioned lemon-scented apple and mincement tart, glazed with melted apricot jam.

Apple Mince Tart

3 tart baking apples, sliced
2 tablespoons lemon juice
1 1/2 cups prepared mincemeat
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 teaspoons butter
1/2 cup apricot jam, melted
1 (9-inch) unbaked pie shell
  1. Preheat oven to 400°F (205°C).
  2. In a bowl combine thinly sliced apples with lemon juice; tossing to coat evenly.
  3. Spread mincemeat in unbaked pie shell; arrange the apples on top. Sprinkle with sugar, cinnamon, and nutmeg. Dot with butter.
  4. Bake for 55 to 60 minutes, or until the crust is golden and the apples are tender. Brush with melted apricot jam.

Makes 9 servings.
