This low-fat, no-bake cheesecake is loaded with berries. Take a few moments to whip up this creamy dessert tonight.

Berry Tofu Cheesecake

2 cups lemon/lime soda, divided use
3 packets unflavored gelatin
1 cup raspberries or blueberries, rinsed
4 ounces tofu, drained
2 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon fresh lemon juice
1 graham cracker pie crust
  1. Combine half the soda with gelatin in a bowl; stir and set aside. Heat remaining soda then pour over gelatin and stir until dissolved.
  2. Pour mixture into a blender; add raspberries, tofu, honey, vanilla and lemon juice. Process until smooth and creamy.
  3. Pour into pie crust and refrigerate until firm. Garnish with additional berries, if desired, just before serving.

Makes 8 servings.
