Creamy Chilled Cheesecake
- 1 cup graham cracker crumbs
3/4 cup granulated sugar, divided use
1/4 cup butter or margarine, melted
1 package unflavored gelatin
1/4 cup cold water
1 (8-ounce) package cream cheese, softened
1 cup heavy cream, whipped
1/4 cup strawberries, sliced
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter; press onto the bottom of a 9-inch springform pan.
- Soften unflavored gelatin in cold water, and stir over low heat until dissolved. Combine softened cream cheese and 1/2 cup sugar; mixing at medium speed with an electric mixer until well blended. Add to the gelatin mixture. Chill until slightly thickened.
- Whip cream until soft peaks form. Fold into chilled cream cheese mixture. Pour over the crust and chill until firm. Top with sliced strawberries.
Makes 12 servings.
