A creamy cheesecake with a vanilla wafer crumb crust and sour cream topping, served with cherry or strawberry pie filling.

Deluxe Cheesecake

Crust:
2 cups vanilla wafer crumbs (60 cookies)
1/2 cup butter, melted
 
Filling:
4 (8-ounce) packages cream cheese, softened
1 1/3 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
 
Topping:
2 cups sour cream
1/4 cup granulated sugar
2 teaspoons vanilla extract

Cherry or strawberry pie filling
  1. For Crust: Combine crumbs and butter; press onto bottom of 13 x 9-inch pan.
  2. For Filling: Combine cream cheese and sugar, mixing at medium speed on electric mixer until well-blended. Add eggs, one at a time, mixing well after each addition. Blend in vanilla; pour over crust.
  3. Bake at 375°F (190°C) for 30 minutes. Remove from oven and let stand 15 minutes.
  4. Increase oven temperature to 425°F (220°C).
  5. For Topping: Combine sour cream, sugar and vanilla. Spread over cheesecake. Bake for 10 minutes.
  6. Allow to cool at room temperature; chill before serving.
  7. Serve with cherry or strawberry pie filling spooned over individual servings.

Makes 12 to 16 servings.
