Fig Crème Brûlée with Blue Cheese
Start or end your meal with this simple, yet elegant fruit course. Recipe by Chef Gregg Wangard.
1 large Black Mission fig
1 teaspoon Wisconsin Blue cheese
1/2 teaspoon raw (turbinado) sugar
- Cut fig in half. Using melon ball scoop or round spoon, scoop out seeds. Fill with cheese. Sprinkle with sugar. Caramelize sugar with torch until it has turned golden brown.
Makes 1 serving. (Increase recipe as needed.)
Tip: If you do not have a torch, put in the oven under the broiler until golden brown.
