Frozen Yogurt Cookie Sandwiches.

Surprise your family and friends with these yummy cookie ice cream sandwiches and watch the big smiles quickly appear on their faces.

Frozen Yogurt Cookie Sandwiches

3/4 cup butter
3/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
3 cups sweetened granola
1 cup raisins
Frozen yogurt
  1. Beat butter and sugar until light and fluffy. Blend in egg and vanilla. Combine flour, cinnamon, baking soda and salt. Add to butter mixture, mixing well. Stir in granola and raisins until well-combined.
  2. For each cookie, drop two rounded tablespoonfuls of dough onto a lightly greased cookie sheet; flatten to 2 1/2-inches.
  3. Bake at 350°F (175°C) for 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheet. Cool completely.
  4. For each sandwich, place one large scoop frozen yogurt on the bottom of one cookie. Top with second cookie; press gently. Wrap in foil; freeze.

Makes 9 cookie sandwiches.
