This comforting, autumn-perfect
dessert features a juicy pear and raisin filling topped with
a crisp oat bran crumble topping laced with shredded Gouda cheese.
Gouda
Pear Crisp
- 2 pounds (about 5) Bosc
or other winter pears, cored and sliced thinly
1/2 cup dark or golden raisins
1/4 teaspoon ground nutmeg
3 tablespoons lemon juice
1/2 cup brown sugar, packed
3/4 cup oat bran
1/8 teaspoon salt
1/4 cup (1/2 stick) cold butter, cut in bits, plus butter for
pan
1 cup (4 ounces) shredded Wisconsin Gouda cheese
- Arrange pears in a buttered
8 x 8-inch pan. Sprinkle with raisins, nutmeg, and lemon juice;
reserve.
- Mix sugar, oat bran, and
salt. Cut in butter until mixture resembles coarse cornmeal.
Stir in cheese; sprinkle over pears.
- Bake at 350°F (175°C)
until the pears are just tender and the top lightly browned,
about 35 minutes.
