This comforting and toothsome baked pudding
was first shared on the box of Post Grape Nuts cereal many years
ago.
Grape-Nuts Pudding
- 4 cups milk, warmed
1 cup Post Grape Nuts cereal
4 large eggs, beaten
1 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon or 1/4 teaspoon ground nutmeg
(or both)
- Preheat oven to 350°F (175°C).
- Pour warm milk over cereal in a large
mixing bowl. Let stand 5 minutes. Add eggs, sugar, salt, vanilla,
and cinnamon and/or nutmeg. Mix well.
- Pour into a buttered 9 x 13 x 2-inch baking
dish set inside a larger pan filled with water (called a bain-marie
or water bath).
- Bake for about 60 minutes or until knife
inserted in center comes out clean. Serve hot or cold.
Makes 8 to 10 servings.
