This recipe makes two cheesecake
pies made with ricotta cheese.

Cheesecake
- 1 1/2 pounds ricotta cheese
1 (8-ounce) package cream cheese
3 large egg yolks
1/2 cup granulated sugar
2 tablespoons brandy
2 tablespoons vanilla extract
2 (9-inch) graham cracker pie crusts
1/4 cup chocolate syrup
- In a large mixing bowl,
combine together ricotta cheese, cream cheese, egg yolks, sugar,
brandy, and vanilla, beating until well-blended.
- Pour into 2 (9-inch) graham
cracker pie crusts and drizzle with chocolate syrup.
- Bake in a 350°F
(175°C) oven for 30 minutes, or until the center is set.
Makes 16 servings.
