Kiwifruit Tarragon Sorbet

Kiwifruit Tarragon SorbetRefreshing in its intensity, this sorbet has a delightful kiwifruit-lime flavor with fresh tarragon finish. Serve a small scoop on a thin wafer cookie as an unexpected intermezzo treat.

Recipe Ingredients:

8 ZESPRI™ Green Kiwifruit, scooped into pieces
1/3 cup fresh key lime juice
2 tablespoons fresh tarragon
1 cup water
1/2 cup granulated sugar
2 tablespoons corn syrup

Cooking Directions:

  1. Purée kiwis, lime juice and tarragon in food processor until just blended. (Do not crush kiwifruit seeds.)
  2. Heat water, sugar and corn syrup until sugar is dissolved. Remove from heat and cool.
  3. Stir puréed kiwifruit into cooled sugar syrup mixture. Pour into ice cream maker and freeze following manufacturer's instructions.
  4. Serve garnished with fresh kiwifruit slices.
