Creamy lemon-flavored cheesecake
is contained in a disposable paper cup -- very handy for picnics
or office parties.

Lemon Cheesecakes
- 12 vanilla wafers
1 (8-ounce) package cream cheese
1/3 cup granulated sugar
1 large egg
2 teaspoons lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon vanilla extract
- Preheat oven to 325°F
(160°C). Line a muffin tin with paper baking cups.
- Divide vanilla wafers,
placing one in the bottom of each cup. In a medium mixing bowl,
beat together cream cheese, sugar, egg, lemon juice, lemon peel
and vanilla until light and fluffy.
Fill paper cups two-thirds full.
- Bake for 15 to 20 minutes
or until cheesecake is just set.
Makes 12 miniature cheesecakes.
