Delicious, vanilla cheesecake
with a nut crust and topped with cherry pie filling.

Northwest Cheesecake Supreme
- 1 1/2 cups finely chopped
nuts
2 tablespoons granulated sugar
3 tablespoons butter or margarine, melted
3 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
3 tablespoons all-purpose flour
4 large eggs
1 cup sour cream
1 tablespoon vanilla extract
1 (21-ounce) can cherry pie filling
- Combine finely chopped
nuts, 2 tablespoons sugar, and melted butter. Press onto the
bottom of a 9-inch springform pan. Bake at 325°F (160°C)
for 10 minutes.
- Meanwhile, combine softened
cream cheese, 1 cup sugar, and flour; mixing at medium speed
with an electric mixer until well blended. Add eggs, one at a
time, mixing well after each addition. Blend in sour cream and
vanilla; pour over the crust.
- Bake at 450°F (230°C)
for 10 minutes. Reduce the temperature to 250°F (120°C)
and continue baking for 1 hour.
- Loosen the cake from the
rim and cool before removing. Chill.
- Top with cherry pie filling
just before serving.
