
This festive cranberry
ice cream parfait will make any occasion special.

Ice Cream Cranberry Parfait
- 2 cups granulated sugar
1/2 cup cranberry juice
2 cups cranberries
Premium vanilla ice cream
- Combine sugar, juice and
cranberries in small saucepan; cover. Bring to boil over medium
heat and cook for 5 to 7 minutes, or just until skins pop. Cool
to room temperature; chill.
- For each parfait, layer
cranberry mixture and ice cream in tall serving dish.
Makes ? servings.
Variation: Reduce sugar
to 1 cup. Substitute cherry juice for cranberry juice and fresh
or frozen cherries for cranberries. Cook cherries with sugar
and juice for 5 minutes. Stir in 1 tablespoon cornstarch mixed
with 1 tablespoon cherry juice; boil 1 minute, stirring constantly.
