Rice Lime Fruit Cocktail Cream
Serve this refreshing rice and fruit cocktail lime gelatin dessert in individual molds or simply spooned into glass stemware.
1 (15-ounce) can fruit cocktail (drain; reserve syrup)
1 (3-ounce) package lime gelatin
2 tablespoons lemon juice
1 1/2 cups cooked rice
1 (1.25-ounce) envelope whipped topping mix, prepared (makes 2 cups)
- Combine syrup from fruit cocktail with enough water to make 2 cups. Heat to boiling. Pour over gelatin and stir until dissolved. Chill until mixture is partially set.
- Stir in fruit cocktail and rice. Fold in prepared whipped topping.
- Spoon into individual molds or dessert dishes. Chill until set.
Makes 6 servings.
