A cool refreshing dessert to have on warm days. Fresh berries by the bowlful, dressed in a citrusy glaze add sparkle to a meal's conclusion.

Spring Berry Compote

1/2 pint fresh raspberries
1/2 pint fresh blueberries
1/2 pint strawberries, hulled, quartered
1/2 cup granulated sugar
2 tablespoons frozen orange juice concentrate
  1. In a saucepan over medium-heat, heat raspberries and blueberries; simmer 5 minutes.
  2. Add the strawberries and simmer until strawberries begin to soften ( about 3 minutes).
  3. Add sugar and orange juice concentrate and simmer until sugar dissolves (about 3 more minutes).
  4. Chill 1 hour. Stir before serving and spoon into dessert dishes

Makes 8 servings.
