Strawberries, macerated
in sugar and orange liqueur, are served with mascarpone cheese
flavored with Kummel liqueur.
Strawberries
Romanoff Mascarpone
- 3 tablespoons granulated
sugar
3 tablespoons orange-flavored liqueur
1 quart strawberries, hulled & halved (reserve 6 strawberries
for garnish)
12 ounces Wisconsin Mascarpone cheese
1/3 cup granulated sugar
1/4 cup Kummel liqueur
- Combine 3 tablespoons
sugar and orange-flavored liqueur. Pour mixture over strawberries.
Cover and let stand several hours.
- In a small bowl, combine
the mascarpone cheese and 1/3 cup sugar using an electric mixer.
Beat in the Kummel liqueur. Chill.
- To serve, divide strawberries
into 6 shallow bowls. Top each with 3 tablespoons mascarpone
mixture. Top with reserved strawberry for garnish. Serve immediately.
