Wow! Fresh apples and strawberries make this shortcake sing. Top with whipped cream and a touch of mint, and you have a family dessert favorite.
Warm Braeburn Apple-Strawberry Shortcakes
- 2 braeburn apples
1 tablespoon lemon juice
1/2 cup granulated sugar
1/2 cup water
2 cups sliced strawberries
1 tablespon balsamic vinegar
1 tablespoon butter
2 teaspoons chopped fresh mint
4 prepared shortcakes or pound cake slices
2 cups whipped cream or vanilla frozen yogurt
- Core apples and cut into 3/4-inch pieces. Toss with lemon juice and set aside.
- Combine sugar and water in a large skillet. Stir to dissolve sugar over high heat; bring to a boil. Reduce heat to medium-high and stir in apples. Cook 2 minutes, or just until apples soften slightly.
- Toss strawberries with balsamic vinegar. Stir into apple mixture and cook 30 seconds, or just to heat strawberries. Stir in butter and mint and remove from heat.
- To Serve: Set shortcakes on dessert plates. Pour sauce over each shortcake. Top with whipped cream or frozen yogurt.
