There are a number of explanations as to
why this dish is called 'Watergate Salad Dessert', but according
to Kraft Kitchens, when the recipe for Pistachio Pineapple Delight
Salad was sent out, a Chicago food editor renamed it Watergate
Salad to promote interest in the recipe when she printed it in
her column.
Watergate 'Salad'
Dessert
- 1 (3.5-ounce) package
instant pistachio pudding mix
1 (8-ounce) can pineapple, drained
2/3 cup chopped pecans
1 1/3 cups miniature marshmallows
1 (8-ounce) container non-dairy whipped topping
- Mix all together and pour into an 8 x
8-inch pan. Chill well and serve cold.
Makes 6 to 8 servings.
