Add this sweet potato side dish to your holiday repertoire. With only 1 gram of fat per serving and a 21% calorie reduction from the original, there is plenty of great flavor, so no one will know!
Glazed Sweet Potatoes
- 1 cup frozen apple juice concentrate, thawed
2 teaspoons cornstarch
1/3 cup Equal® Spoonful*
1 teaspoon stick butter or margarine
1 teaspoon maple extract
1 teaspoon vanilla extract
2 pounds sweet potatoes, peeled, cut into 1-inch slices, cooked, kept warm
- Combine apple juice concentrate and cornstarch in small saucepan. Bring to boil over medium heat, stirring constantly. Boil and stir 2 minutes or until thickened and bubbly. Remove from heat. Stir in Equal®, butter, maple extract and vanilla until blended.
- Pour glaze over potatoes in serving bowl; toss gently.
Makes 8 servings.
* May substitute 8 packets Equal sweetener.
