Granola (Diabetic)
- 2 cups quick-cooking oats
2 cups unsweetened multigrain flakes (Nutri-Grain®)
1/2 cup flaked unsweetened coconut
1/4 cup sliced almonds
5 1/2 teaspoons Equal® for Recipes or 18 packets Equal® sweetener or 3/4 cup Equal® Spoonful
1/4 cup light apricot preserves sweetened with NutraSweet® brand sweetener or apricot spreadable fruit
2 tablespoons margarine
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/2 teaspoon maple extract
1 cup dried fruit bits
1 3/4 teaspoons Equal® for Recipes or 6 packets Equal® sweetener or 1/4 cup Equal® Spoonful
- Combine cereals, coconut, almonds, 5 1/2 teaspoons Equal® for Recipes or 18 packets Equal® sweetener or 3/4 cup Equal® Spoonful in bowl. Heat preserves, margarine, spices, and maple extract in small saucepan until bubbly; drizzle over cereal mixture and toss to coat evenly.
- Bake mixture on large jelly roll pan in preheated 350*F (175*C) oven 15 minutes, stirring every 5 minutes. Stir in fruit bits and bake 5 minutes longer. Cool 5 minutes; sprinkle with 1 3/4 teaspoons Equal® for Recipes or 6 packets Equal® sweetener or 1/4 cup Equal® Spoonful and toss. Cool completely; store in airtight container.
Granola can be eaten as a snack or as a breakfast cereal with milk.
Unsweetened coconut can be purchased in health food stores.Makes 8 servings.
