A versatile oil and vinegar dressing with feta cheese, lemon juice and oregano. Use it on green salads, tossed with pasta and vegetables or as a marinade for meat.
Greek Dressing
- 1/2 cup olive oil
1/4 cup (2-ounces) crumbled feta cheese
1/4 cup white wine vinegar
1/4 cup lemon juice
1 tablespoon Equal® Spoonful*
1/2 teaspoon dried oregano leaves
1/8 teaspoon ground black pepper
- Combine all ingredients, stirring with a wire whisk, until blended. Cover and refrigerate 1 to 2 hours to allow flavors to blend. Use as a dressing for mixed salad greens, vegetable or pasta salads.
Makes 8 servings.
* May substitute 1 1/2 packets sweetener.
