Hans Rockenwagner Strawberry Jam
Lime juice and zest brings out the flavor of fresh strawberries in this no-sugar jam.
1 1/2 pounds fresh strawberries
2 cups Splenda® Granulated No Calorie Sweetener
4 tablespoons package SURE-JELL* For Lower Sugar Recipes Fruit Pectin
1 lime, grated peel and juice
- Hull strawberries and cut in half; place in a stainless steel saucepan.
- Combine Splenda® Granulated Sweetener and pectin in a small mixing bowl; add to strawberries and toss until coated. Bring to a boil over medium heat; reduce heat and simmer 4 to 5 minutes. Remove from heat; stir in lime peel and juice.
- Chill, covered. Keeps 7 to 10 days.
Makes 5 half-pint jars; 40 (1 tablespoon) servings.
