To serve a reduced-calorie dish that is ready in about 15 minutes, I came up with this fast recipe. I think the lime juice adds a fresh flavor to the mild taste of fish.- Recipe by N.N. of Clarksdale, Mississippi.
Lime Broiled Catfish (Diabetic Recipe)
- 1 tablespoon margarine
2 tablespoons fresh lime juice
1/4 teaspoon freshly ground pepper
1/4 teaspoon garlic powder
2 catfish fillets (6-ounces each)
- Melt margarine in a saucepan. Stir in lime juice, pepper and garlic powder; mix well. Remove from the heat and set aside.
- Place fillets in a shallow baking dish. Brush each generously with lime sauce. Broil for 5 to 8 minutes or until fish flakes easily with a fork. Transfer to a warm serving dish; spoon pan juices over each fillet.
Makes 2 servings.
